Origin

Located near Beaune, Aloxe-Corton and Savigny-Lès-Beaune, Chorey-Lès-Beaune lies at the bottom of the slope. Though it has only recently gained recognition (1969), Chorey-Lès-Beaune is a unique appellation as 2/3 of its vines are planted on the flatlands. Located at the foot of the hill and above the national road. This climate is made up of 2 different plots.
It is certainly the difference in height between the parcels bearing this name and the village below on flat land, that is evoked in the second word of this place name: mont.
No doubt Beau is the qualifying adjective that highlights the quality of these parcels and of the wine produced on this slope!

Viticulture

Grape variety: pinot noir
Soils: red marls indicating the presence of iron and small limestone scree
Orientation: South-East
Surface area under vine: 0.7804 ha
Pruning: Guyot system
Yield: 41 hL/ha
Average age of the vines: 100 years old for 1 plot and thirty years old for the other one.

Vinification

Harvest date: 11 September 2023.
The grapes were handpicked. They were sorted a first time in the vineyard and again on the sorting table when they arrived at the winery.
At the winery: the grapes were 100% destemmed but not crushed and were gravity-fed into tanks. Maceration of 21 days of which 3 days cold (12 ° C): Fermentation used indigenous yeasts only (no additives such as enzymes or tannins were used). 3 punchings of the cap.

Ageing

Maturation: aged on the lees for 15 months with no racking using a proportion of 30% new French oak barrels.
Barrels: French oak barrels that had been toasted at low temperatures for a long time for very delicate oaking.

Bottling

Bottling: by gravity on January 27, 2025, wine fined with bentonite, very light lenticular filtration.
Number of bottles: 4,312.

Vintage

Fruity and generous
The 2023 vintage experienced unpredictable weather conditions, making work in the vineyards essential for grape quality. Harvesting began in early September under intense heat with the Chardonnays to avoid over-ripening, followed by the reds. The whites will spend two winters in the cellar, while the Pinot Noirs will have undergone short ageing to preserve the fruity aromas. A vintage that brings out the best in each terroir, offering wines that are bright and delicious.
Ageing potential: from 6 to 9 years.

Tasting notes

Intense garnet-red in color, this wine reveals concentrated aromas of black fruit and cassis, with a delicate smoky note. On the palate, it is greedy and unctuous, with mellow tannins supported by pleasant acidity. Well-structured, it offers a subtly woody finish, heralding excellent ageing potential.
