Origin

Located near Beaune, Aloxe-Corton and Savigny-Lès-Beaune, Chorey-Lès-Beaune lies at the bottom of the slope. Though it has only recently gained recognition (1969), Chorey-Lès-Beaune is a unique appellation as 2/3 of its vines are planted on the flatlands. Located at the foot of the hill and above the national road. This climate is made up of 2 different plots.
It is certainly the difference in height between the parcels bearing this name and the village below on flat land, that is evoked in the second word of this place name: mont.
No doubt Beau is the qualifying adjective that highlights the quality of these parcels and of the wine produced on this slope!

Viticulture

Grape variety: pinot noir
Soils: red marls indicating the presence of iron and small limestone scree
Orientation: South-East
Surface area under vine: 0.7804 ha
Pruning: Guyot system
Yield: 43hL/ha
Average age of the vines: 100 years old for 1 plot and thirty years old for the other one.

Vinification

Harvest date: 12th of September 2017.
The grapes were handpicked. They were sorted a first time in the vineyard and a second time on the sorting table when they arrived at the winery.
At the winery: the grapes were completely destemmed but not crushed (they were left whole) and were gravity-fed into tanks. Maceration lasted a total of 21 days including 5 days of cold maceration (12°C). Fermentation used indigenous yeasts only (no additives such as enzymes or tannins were used). 4 punchings of the cap.

Ageing

Maturation: aged on the lees for 16 months with no racking using a proportion of 30% new French oak barrels.
Barrels: French oak barrels that had been toasted at low temperatures for a long time for very delicate oaking.

Bottling

Bottling: The wine was gently filtered before being bottled by gravity in March 2019.
Number of botlles: 4,457.

Vintage

2017 , finesse
The growing cycle was thrown off-kilter by a very cold winter, late spring frost, then optimal conditions for rapid flowering, sporadic hail, and summer drought. Harvesting began in early September in the sun, and after several lean years, the vines finally produced abundant grapes, although with significant differences in maturity between whites and reds and from one region to another, which called for strict sorting.
Ageing potential: from 5 to 8 years.

Tasting notes

With a ruby ​​color with dark red reflections. This elegant wine reveals a beautiful aromatic complexity of small black fruits, black pepper and smoky notes. On the palate, the attack is on freshness and the texture is very silky.
