Origin

Savigny’s vineyards form a V-shape and are located at the meeting place of a valley and the plain, offering some of the most picturesque scenery in the Côte d’Or. These vineyards are of ancient lineage. For much of their history, they belonged to the domaine of the Dukes of Bourgogne, to neighbouring religious houses, or to the Knights of Malta. An imposing 14th century castle testifies to the appellation's aristocratic qualifications.

This fairly large plot is located not far from the river named Rhoin.
In the 14th, 15th and 16th centuries, 'Aux Clous' meant Clos, which could designate gardens sometimes enclosed by walls. Gardens that have turned into plots of vines.
The grapes selected from this cuvée are certified Veritas.

Viticulture

Grape variety: pinot noir
Soils: light with limestone gravel.
Orientation: South
Surface area under vine: 0.2375 ha
Pruning: Guyot system Yield: 44 hL/ha
Average age of the vines: 72 years old.

Vinification

Harvest date: 21 September 2021.
The grapes were sorted a first time in the vineyard and a second time on the sorting table when they arrived at the winery.
At the winery: the grapes were 100% destemmed but not crushed (they were left whole) and were gravity-fed into tanks. Maceration with whole bunches of 21 days including 4 days cold (12 ° C): Fermentation used indigenous yeasts only (no additives such as enzymes or tannins were used). 2 punchings of the cap.

Ageing

Maturation: aged on the lees for 13 months with no racking using a proportion of 44% new French oak barrels.
Barrels: French oak barrels that had been toasted at low temperatures for a long time to impart a very delicate touch of oak to the wine.

Bottling

Bottling by gravity in December 2022, after a slight lenticular filtration.
Number of bottles: 1,392.

Vintage

A complex vintage!
It is both a winegrower and winemaker’s vintage ! 2021 will unfortunately be remembered quantity-wise for a long time by its disastrous frost early april. Direct consequence: this is probably one of the smallest vintages ever in Burgundy . It offers a very nice and subtle representation of each terroir and its expression, with fruity, freshness and great finesse wines.
Ageing potential: from 6 to 10 years.

Tasting notes

With its brilliant purple colour, this wine gives off intense aromas of peonies, forest fruits and toasty notes. On the palate, this wine is greedy and fruity, with a lovely freshness on the finish.
