What we look for in a white wine is a mineral character and great refinement. That's why the vat maturation process for our white wines largely dispenses with new vats, to ensure that the character of the vine - and nothing else - shines through. For the same reason, we do very little stirring of the lees, in order to retain as much distinction and elegance as possible.
