Maturation in new barrels is not used as a rule, as it can sometimes be used rather overenthusiastically, stamping too much of its powerful, tannic imprint on the wines. Jean-Claude Boisset wines are fruity, yet not too light; authentic, and perhaps a little rustic, but above all, which possess their own personalities. These are the sort of wines which will reveal the full character of the Pinot and Chardonnay grapes.
Malolactic fermentation is always a very long process, which can sometimes take an entire year. Our predecessors may not have been able to explain why, but they understood perfectly well that the longer this process, the better the wine. Perhaps some things are simply beyond our understanding. The wine is bottled without filtration, to ensure that none of its intrinsic qualities is lost.
